Health Benefits of Pumpkin
Before goin into all the great things you can do with a pumpkin, I NEED to point out some really awesome health benefits of this giant of a vegetable, but since I’m not the nutrition expert here, let me give you some resources who are:

Delicious Ways to Enjoy Pumpkin
- Pumpkin Bread – Moist, spiced pumpkin bread is a classic fall favorite and a great way to start using up pumpkin. Fresh pumpkin puree adds a depth of flavor that canned can’t beat.
- Pumpkin Pie Leather – Think of this as a pumpkin pie you can take anywhere! By dehydrating pumpkin puree with some warming spices and a banana for sweetness, you create a delicious, nutrient-packed treat that stores easily and is perfect for hikes or snacks.
- Pumpkin Fritters – These savory fritters make a tasty appetizer or side dish, perfect for cozy fall meals. Just a little flour, egg, and herbs mixed with shredded pumpkin creates crispy-on-the-outside, tender-on-the-inside fritters.
- Pumpkin Soup – A creamy pumpkin soup brings warmth to a chilly evening. Blended with onions, garlic, and a touch of cream or coconut milk, this soup makes a comforting, healthy meal.

My essential tools for these are my Nutribullet Blender, Cuisinart Food Processor, and Nesco Food Dehydrator. It would be tough doing all this without them. I know they work well, and I highly recommend them.

Freezer space is precious, so we decided to dehydrate our pumpkin instead. This method keeps it shelf-stable and ready for future soups, breads, or stews without the need for freezing. Plus, it’s an excellent option since home canning pumpkin isn’t recommended without commercial equipment. Simply dehydrate raw, grated pumpkin or cooked puree and store it in airtight containers for easy rehydration later on.

Roasting Seeds for a Tasty and Healthy Snack
Pumpkin seeds are loaded with healthy fats, protein, and minerals. It is so easy to roast pumpkin seeds too. A quick rinse and roast with your favorite seasonings transform them into a delicious, crunchy snack that’s hard to beat. Don’t forget! These seeds aren’t just for eating; they can also be saved and planted in June, so your Arizona garden can produce its own pumpkins next fall! Always keep a stash of seeds from your favorite pumpkin variety so you can perpetuate them over the years.
